Spaghetti or Squash? That's the question!


I love spaghetti squash...and if you've never had it before, it's a great replacement for pasta if you're watching your carbs and you want something hearty, very nutritious and comforting...and it's so easy to make!!!

First, I split the spaghetti squash in half and then roasted it in the oven with some olive oil sprinkled over it, some salt and pepper, rosemary and then Pampered Chef Crushed Peppercorn and Garlic Rub.   Then I put them on a foil lined sheet pan with about 1/4" of water on it and popped them in the oven at 350 degrees for about 45 minutes, or until al dente, just like you would want your pasta...tender with some texture. 




When the squash was almost done, I combined a can of organic marinara sauce with some fresh spinach (gotta get your healthy greens in!!) and some lean ground beef I had sauteed in Pampered Chef Italian Seasoning mix. Let all that simmer and the sauce is ready. 




You can see above how a fork is used to scrape the squash flesh from the crispy shell...it comes out looking like spaghetti when it's done.


This is the "spaghetti" from just one half of the squash..you can definitely serve a family of four with just 1-2 of these and it is so much healthier for you.  it's tasty just like this.



Here we are with the "spaghetti" from the squash topped with the sauce and on the side we have some roasted sweet potatoes. sounds yummy to me!!  (YOU CAN CLICK ON THE PHOTOS FOR A CLOSER LOOK**)
